Easy Treats: Banana Coconut Bites

I got this recipe from my local grocery store.  They are really simple, easy to make and are a healthy option for those with a sweet tooth (like me).

Ingredients:

– 2 ripe bananas, cut up into slices

– 1/2 generous cup of sweetened shredded coconut

– 1 c homemade whole grain bread crumbs

– 1/4 organic plain whole milk yogurt

1. Slice bananas and set aside.  Over medium heat in a saucepan or skillet, combine breadcrumbs and coconut.  Toast for a few minutes until yummy aroma begins to waft through your house.  Remove from heat.

2. Place yogurt in a gallon size ziplock bag and toss in bananas until well coated.

3. Transfer breadcrumb mixture to a plate and toss in the yogurt covered banana slices until well coated with the breadcrumbs.  Transfer to the freezer for at least 1 hour.

    Oh I am going to try that! I love coconut and bananas are so good for us. I have a huge sweet tooth. So finding healthier ways to indulge it are what I am always looking for.
